Mackerel vol-au-vents
Preparation time: 30 minutes
Ingredients for 4 servings:
Decorate with a few leaves of fresh lettuce.
Preparation
Finely chop up the mackerel in oil and then sieve it twice, collecting it in a small bowl. Add the ready-made mayonnaise and mix thoroughly until they are perfectly blended, resulting in a soft and homogeneous purée.
Put the purée in a pastry pouch with star-mouthed nozzle and press sufficient quantities of it into each puff-pastry boat.
Garnish the centre of each boat with half a fillet of desalted anchovy rolled up. Place the boats on a serving dish and decorate the rime with white fresh lettuce leaves.

Zite with tomatoes and mackerel sauce
Preparation time: 25 minutes
Ingredients for 4 servings::
Preparation
Wash the tomatoes and cut them up while removing the seeds. In a pot, put the oil, the cleaned anchovies and the onion and garlic mince. Place the pot over low heat and break up the anchovies with a fork.
FatBrown for five minutes, then add the tomatoes, cover and cook for 20 minutes. Then add the chopped mackerel, a pinch of marjoram, the pepper and check for salt. Boil the zite in abundant salted water, drain them and top them with the tomato sauce and grated caciocavallo.
