Irish style crab meat
Preparation time: 15 minutes
Ingredients for 4 servings:
Decorate with: white lettuce leaves
Preparation
Place in a bowl the crumbled crab meat, the tomatoes cut into pieces, the chopped boiled egg, the parsley, the lemon juice, the salt and pepper. Mix everything well, add the mayonnaise and the cream and blend thoroughly. Place everything in a serving dish previously covered with properly washed and dried lettuce leaves and place in the fridge for 30 minutes before serving.
This dish is an excellent hors d'oeuvre as well as a second course in the summer. If you wish to exalt its flavour, add a few drops of Worcester sauce or English mustard.

Crab meat in rice salad
Preparation time: 15 minutes
Ingredients for 4 servings:
Preparation
Boil the rice until it is "al dente" in abundant salted water and a laurel leaf. Drain it, remove the laurel, rinse it under cold running water, drain it again and then spread it over a clean cloth to dry. Place the rice in a salad bowl and dress with oil and Tabasco sauce (or Cayenne pepper).
Extract the crab meat from the can, remove any cartilage, break it up into small pieces and add it to the rice. Then add the gherkins and check for salt. Cover with chopped parsley and mix well. Allow to rest for one hour before serving.
